I tasted this delicious red blend with winemaker Matthias Gubler, who said: “I find it more interesting to play with varieties.” Made up of 66 percent Petite Verdot and 34 percent Petite Sirah—two varieties that grow quite well in Paso Robles—it’s rich and distinctive. Deeply colored, it offers intense flavors of blackberries, black plums, currants, and spice that meld nicely with notes of cedar and earth. “The Signature is always focused on Petite Verdot, while the Petite Sirah lifts the berry flavors,” Gubler said. Because it’s so bold, he suggests pairing it with bold foods: aged Gouda, osso buco, or grilled lamb. Available at the tasting room on Hwy. 46 East, it’s $39 retail.
