It offers flavors of grass, melon, and citrus, with nuances of herbs. It’s the perfect foil for spicy Mexican and Asian dishes, but not fire-in-the-hole kinds of hot foods. Pair it with green chile and pepper Jack cheese enchiladas, pizza with prawns and goat cheese, or a main dish chicken salad with green goddess dressing.
