This delicious wine, so layered in flavors, drinks impressively from start to finish. Winemaker Fintan du Fresne chooses the finest selections from the vineyards each year to create this elegant wine. “Every year the final blend of Califa varies depending on whichever clones have performed best that vintage,” du Fresne explained. “In 2008, it was clones 2A, 667, and 777. The finished wine was aged in 60 percent new French oak barrels for 16 months.” It has the unique quality of expressing both red and black fruit flavors. Delicious flavors of strawberries, plums, and blackberries meld with the vivid tang of raspberry, citrus, and spice. It’s irresistible on its own, the lingering fruit flavor beckoning you back for more. But it will reward you after five or more years of aging. This wine is quite versatile at the table and will pair well with everything from peppered ahi or roast salmon to grilled beef or lamb. Available at the tasting room on Orcutt Road, and many restaurants, this special wine is $60 retail.
